Ingredients

Lemon Loaf:

  • 1 ½ cups flour
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ cup 1 stick butter
  • ¾ cup sugar
  • 3 eggs
  • ½ cup Greek yogurt plain unsweetened
  • 2 lemons zested
  • 3 Tbsp lemon juice
  • 1 tsp vanilla extract

Lemon Icing:

  • 1 cup confectioners sugar
  • 1 ½ tbsp lemon juice

Instructions

Lemon Loaf

  • Preheat oven to 350° F. Grease a loaf pan. Set aside.
  • In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  • In a separate bowl or bowl of a stand mixer, beat together butter and sugar with an electric mixer for 1-2 minutes.
  • With mixer on medium, add eggs one at a time.
  • Add Greek yogurt, lemon zest, lemon juice, and vanilla extract.
  • Add flour mixture and mix until just combined.
  • Pour batter into greased loaf pan, smoothing the top. Bake for 45 min.
  • Allow to cool for at least 40 minutes, or until mostly cooled to room temperature.

Lemon Icing

  • In a small bowl, combine the confectioners sugar and lemon juice.
  • Whisk together until well combined and you have a thick glaze consistency with no clumps of sugar.

Assembly

  • Spoon the lemon icing evenly over the cooled loaf.
  • Allow icing to set for a few minutes before enjoying.
