Preheat oven to 350° F. Grease a loaf pan. Set aside.
In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
In a separate bowl or bowl of a stand mixer, beat together butter and sugar with an electric mixer for 1-2 minutes.
With mixer on medium, add eggs one at a time.
Add Greek yogurt, lemon zest, lemon juice, and vanilla extract.
Add flour mixture and mix until just combined.
Pour batter into greased loaf pan, smoothing the top. Bake for 45 min.
Allow to cool for at least 40 minutes, or until mostly cooled to room temperature.
