Ingredients
1 ½cupsold fashioned oats
½cupwalnuts, chopped
½cupunsweetened coconut flakes
½cupfreeze dried apples, chopped
¼cupcrystallized ginger, finely chopped
¼cupraisins
2Tbspchia seeds
2Tbsppumpkin seeds
½Tbsground cinnamon
1tspmaca powder(optional)
½tspground ginger
½tspground nutmeg
¼tspsalt
¼cupcoconut oil, melted
3-4Tbsphoney(depending on desired sweetness)
1tspvanilla extract
Instructions
Preheat oven to 325° F.
In a large bowl, toss together all dry ingredients (oats through salt).
In a separate small bowl, mix together oil, honey, and vanilla extract, then toss with dry ingredients until well combined.
Line a baking sheet with parchment paper and pour granola into an even layer. Bake for 15 minutes.
When done baking, let granola cool completely.* Once cooled, break granola into chunks, and transfer to an airtight container.
Notes
*If you prefer large chunks, put the baking sheet of cooked granola in the freezer for 5-10 minutes before breaking the granola apart. The coconut oil will harden, allowing you to break the granola into larger pieces.
