Ingredients

  • 1 (15.5 oz) can chickpeas, drained and rinsed
  • 1 cup shredded carrots
  • ½ cup diced red onion
  • ½ cup diced celery
  • cup raisins
  • ¼ cup chopped fresh mint
  • ¼ cup lemon juice
  • 2 Tbsp extra virgin olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp ground turmeric
  • ½ tsp ground ginger
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  • Combine all ingredients in a large bowl and stir together until evenly combined.
  • Serve at room temperature or chilled. Store leftovers in an airtight container in the fridge.
