Chipotle Mashed Sweet Potatoes

Ingredients

  • 3 medium(about 650 grams) sweet potatoes, peeled and cut into 1-inch cubes
  • cup milk (dairy or non-dairy)
  • 1 tbsp butter, unsalted
  • 1 tsp honey
  • 1 chipotle pepper, finely chopped
  • 1-2 tsp adobo sauce from canned chipotle peppers
  • 2 cloves garlic, minced
  • ½ tsp salt, or more to taste
  • ½ tsp smoked paprika

Instructions

  • Place sweet potatoes in a pot with 1/2 cup water over high heat.
  • Bring to a boil, then reduce to a simmer and cover. Steam sweet potatoes for about 15 minutes, or until tender and easily pierced with a fork. Drain the potatoes and add back to the pot.
  • Add the milk and butter to the pot and mash with a potato masher until you reach a desired texture (as smooth or as chunky as you prefer).
  • Add the honey, chipotle pepper, adobo, garlic, salt, and smoked paprika, and mash or mix in until evenly combined.
