Cantaloupe Cucumber Salad
This refreshing salad is the perfect blend of sweet, savory, and zesty. It holds well too, making it the perfect offering for potlucks, picnics, and just about any gathering.

- zester or microplane
Ingredients
- 1 ¼ cup cantaloupe cubed
- 1 cup cucumber slices
- ¼ cup red onion finely chopped
- ¼ cup cilantro finely chopped
- 1 lime zested and juiced
- ½ tbsp olive oil
- ½-1 tsp Tajin (Chile lime seasoning) OR ½ tsp chili powder
- salt and pepper to taste
Instructions
- Add cantaloupe, cucumber, red onion, cilantro, lime zest, lime juice, olive oil, and Tajin to a large mixing bowl.
- Season with salt and pepper to taste. Toss to evenly combine. Taste again for salt preference and add salt, if needed.
- Serve immediately, or chill for 20-30 minutes before serving!
