Ingredients

  • 1 tbsp avocado oil or other mild cooking oil
  • 1/2 large white onion diced (about 1/2 cup)
  • 8 oz sweet potato (1 large sweet potato) diced
  • 3-4 cloves garlic minced
  • 1 bell pepper diced
  • 2 15-ounce cans black beans
  • 1 14.5-ounce can diced tomatoes
  • 2 tbsp tomato paste
  • 1 1/2 cup vegetable broth
  • 2 tbsp chili powder
  • 1 tsp cumin powder
  • 1/4 tsp cayenne powder
  • 1 tsp salt
  • 1/2 tsp dried oregano

Optional toppings

  • plain Greek yogurt
  • fresh cilantro
  • lime

Instructions

  • Heat oil in a medium to large pot over medium to high heat.
  • Add onions, sweet potatoes, garlic, and bell pepper. Cook for 5-7 minutes, stirring occasionally.
  • Add all remaining ingredients. Bring to a boil, then reduce to a simmer and cook for 25-30 mins.
  • Serve hot with your favorite toppings, such as fresh cilantro and a squeeze of lime (optional).
