Black Bean and Sweet Potato Chili
This vegetarian chili is a hearty and healthy meal that comes together in no time.

Ingredients
- 1 tbsp avocado oil or other mild cooking oil
- 1/2 large white onion diced (about 1/2 cup)
- 8 oz sweet potato (1 large sweet potato) diced
- 3-4 cloves garlic minced
- 1 bell pepper diced
- 2 15-ounce cans black beans
- 1 14.5-ounce can diced tomatoes
- 2 tbsp tomato paste
- 1 1/2 cup vegetable broth
- 2 tbsp chili powder
- 1 tsp cumin powder
- 1/4 tsp cayenne powder
- 1 tsp salt
- 1/2 tsp dried oregano
Optional toppings
- plain Greek yogurt
- fresh cilantro
- lime
Instructions
- Heat oil in a medium to large pot over medium to high heat.
- Add onions, sweet potatoes, garlic, and bell pepper. Cook for 5-7 minutes, stirring occasionally.
- Add all remaining ingredients. Bring to a boil, then reduce to a simmer and cook for 25-30 mins.
- Serve hot with your favorite toppings, such as fresh cilantro and a squeeze of lime (optional).
