I recently posted my recipe for Better Snickerdoodle Bites, and expressed my love for these little bite sized balls of better-for-you cookie dough. But SHAME ON ME for not posting the original better cookie dough bite recipe! You can read all about why I love these bites, and what’s so great about the ingredients that go into them here.
I want to keep this post short and sweet (pun), and give you the OG recipe for the snack that satisfies my cookie dough cravings every time. I usually make these bites a little larger, but this time around I wanted to make them teeny tiny to resemble my favorite movie theater snack: cookie dough bites (you know, the ones that are dipped in chocolate that come in a small red box). Here in New York, we are still dealing with COVID-19, and so movie theaters are still closed. So, to make up for that I’ve been snuggling up on the couch, with a good ole Netflix movie on the TV and these better cookie dough bites in hand.
P.S. You don’t HAVE TO roll these into tiny balls. You can roll them into whatever shape and size your heart desires. You can also totally just keep a bowl of the unrolled cookie dough in the fridge and pick at it whenever you want. I’m not judging!
Better Cookie Dough Bites
Equipment
- Food processor
- Refrigerator
Ingredients
- ½ cup unsalted cashews
- 12 medjool dates, pitted
- 3 Tbsp cashew butter
- 1 Tbsp maple syrup
- 1 tsp vanilla extract
- 1 Tbsp water*
- ¼ cup dark chocolate chips (or ¼ cup of a dark chocolate bar cut into small chunks)
- optional add in: 1 scoop vanilla protein powder
Instructions
- Pour the cashews into a food processor and blend into fine crumbs.
- Add in the dates, cashew butter, maple syrup, vanilla extract, pinch of salt, and protein powder (if using) and blend until everything is broken down and combined, for about 30-45 seconds, until the mixture resembles cookie dough.*If the mixture is still crumbly, slowly drizzle in up to a tablespoon of water, until it forms a dough. It should all come together into a big ball in the food processor.
- Transfer the dough to a bowl and fold in the chocolate chips.
- To form the bites, roll portions of the dough into tiny bite sized balls.
- Place the bites in the fridge to chill for 10-15 minutes before consuming. You may eat them without chilling first, but the texture will be a little softer than ideal. Store in an airtight container in the fridge, or in the freezer if you prefer an even firmer texture.
